Baked & Egg-Filled Avocado

Avocado with Eggs

Makes 2 Servings


2 ripe avocados, sliced in half

4 fresh eggs

1/8 tsp. pepper

1 tbsp. chopped chives


This is how you make the Avocado with Eggs

Prepare the oven by preheating it to 220°F.

Spoon out about 2 tbsp. of avocado flesh in the center. That would just be enough to fit 1 egg later. Transfer the avocado halves in a small-sized baking dish.

In each avocado half, crack an egg in the center and try to put the yolk first. This will let the egg whites fill up the shell. Bake for 15 to 20 minutes until the egg whites set.

Before serving, top with pepper, chives or any herb of your choice.
