Here’s the best recipe for Kale and Grapefruit Salad
Makes 4 Servings
2 pink grapefruits, peeled and divided into segments
½ red onion, thinly sliced
¼ cup lemon juice
½ cup fat-free plain yogurt
2 tbsp. extra-virgin olive oil
½ tsp. sea salt
¼ tsp. ground black pepper
8 oz. kale, very thinly sliced
1 oz. toasted hazelnuts, chopped or crushed
Squeeze out 3 tbsp. of juice from the grapefruits and mix it together with the onion.
Add in the yogurt, lemon juice, oil, salt, and pepper. Mix everything until thoroughly blended.
Add the mixture to the chopped kale and toss.
Serve the salad with the grapefruit and hazelnuts as topping.
